Every cook has their standard “go-to” dishes. These are the recipes that they can recall from memory, and could probably make blind-folded. One of my classic stand-by’s is Chinese BBQ stir-fried noodles, with beef and spinach. Chinese BBQ sauce, in case you’re not familiar, tastes nothing like Western style BBQ sauces. It is a thick puree of soy sauce, ginger, garlic, fish… and all sorts of goodness. It is often served with hot-pot, but in this dish, it is combined with more soy sauce, ginger, scallions, and garlic as the base sauce for the noodles.
This recipe was the first I had ever mastered, and a definite crowd pleaser. It is very simple but the noodles are sort of tricky because they have a tendency to stick. As a result, I have to put them in the boiling water one noodle at a time. But it is really all worth it, because these noodles are delicious!
